Whole Wheat Tortellini Chicken Soup
Add a side of sliced oranges, and you’ve got the perfect cure for a cold and blustery day!
Players:
- 1 onion- sliced
- 1 clove garlic- minced
- 2 cups baby spinach- sliced
- 1 large can tomatoes- drained and chopped
- 4 cups low sodium chicken broth
- 1 cup water
- 1 package pasta- cooked per instructions in salted water
- 1 rotisserie chicken (precooked)
- 1 tablespoon olive oil
- Kosher salt and pepper to taste
- Crushed red pepper to taste
How to Play:
- Heat oil in large pot over medium heat.
- Saute onions until soft.
- Add garlic and cook for 30 seconds.
- Add tomatoes and cook for 2 minutes.
- Add broth, water, and chicken. Simmer for 10-20 minutes.
- Add cooked pasta and spinach and cook another 2 minutes.
- Salt, pepper, and red pepper to taste.
