Whole Wheat Tortellini Chicken Soup
Add a side of sliced oranges, and you’ve got the perfect cure for a cold and blustery day!
Players:
1 onion- sliced
1 clove garlic- minced
2 cups baby spinach- sliced
1 large can tomatoes- drained and chopped
4 cups low sodium chicken broth
1 cup water
1 package pasta- cooked per instructions in salted water
1 rotisserie chicken (precooked)
1 tablespoon olive oil
Kosher salt and pepper to taste
Crushed red pepper to taste
How to Play:
Heat oil in large pot over medium heat.
Saute onions until soft.
Add garlic and cook for 30 seconds.
Add tomatoes and cook for 2 minutes.
Add broth, water, and chicken. Simmer for 10-20 minutes.
Add cooked pasta and spinach and cook another 2 minutes.
Salt, pepper, and red pepper to taste.
Enjoy!
